Spinach Artichoke Dip

The Spinach Artichoke Dip is the perfect appetizer on a cold winter’s day.  Serve it warm with crackers, chips, or some crusty rustic bread, or stay on the lighter side and add some veggies to the mix to balance it all out. It’s the perfect party food too, so make your next party the best party ever with this delicious Spinach Artichoke Dip.

The perfect appetizer on a cold winter's day. It's also a favorite party food that please the largest of crowds.

Ingredients
  • 16 oz (454g) cream cheese, softened
  • 1 cup (120g) grated Parmesan cheese
  • 1/4 cup (60g) mayonnaise
  • 1/4 cup (60g) sour cream
  • 14 oz (400g) drained canned artichoke hearts, roughly chopped
  • 10 oz (300g) fresh spinach, prewashed
  • 2 garlic cloves, finely minced
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon jarred jalapeño peppers, finely chopped (OPTIONAL)
Directions
  • Step 1 Preheat oven to 350ºF / 176ºC.
  • Step 2 Prepare the spinach. To a pot of boiling water add fresh spinach and blanch until just wilted (about 1 minute). Drain, cool under cold water, drain again very well and squeeze out as much of the excess water as possible. Roughly chop and set aside.
  • Step 3 In a large bowl add cream cheese, Parmesan, mayonnaise, sour cream, garlic, salt and pepper. Mix well to combine.
  • Step 4 Fold in the spinach and artichoke. Mix to combine.
  • Step 5 If you want a little kick mix in the jalapeño peppers but it’s purely optional as the classic Spinach Artichoke Dip doesn’t include jalapeño peppers.
  • Step 6 Choose your shallow dish. You can either bake everything all at one time in one fitting dish or bake in smaller portions by using smaller tapas-sized shallow dishes. I typically use a 5.5 inch (14cm) shallow ceramic dish. This uses up about 1/3 of the dip mixture. What you don’t use you can store in the refrigerator to bake later.
  • Step 7 Lightly grease your chosen dish. Transfer mixture into your dish and even out the top. Bake for 25-30 minutes, until top is lightly golden brown. Baking time depends on depth of your dish.
  • Step 8 Serve with crackers, chips or rustic bread. Vegetables can also be added to the mix for a lighter option.
