Banana Oatmeal Pancakes

Just because this recipe has the word ‘oatmeal’ in it doesn’t mean it’s one of those healthy pancakes that just ruined a perfectly good pancake recipe.   I assure you these Banana Oatmeal Pancakes are really delicious, and yes it’s actually really healthy too.

Unlike most pancake recipes this one doesn’t include any sugar, dairy nor gluten.  The bananas take care of the sweetness, a plant-based milk such as almond milk takes care of the dairy and if you want to exclude gluten then just simply use gluten-free oatmeal.  Is this all sounding just way too healthy for you?  Well…it is!  Have I mentioned how delicious these pancakes are?

To make matters even better these Banana Oatmeal Pancakes are super easy to make because the batter is made in a blender.  That’s right…just add all the ingredients into a blender and in less than a minute your pancake batter is done.  The easiest and fastest pancake batter you’ll ever make.

Healthy, delicious and simple…sounds like the ideal pancake recipe to me.

Banana Oatmeal Pancakes

These Banana Oatmeal Pancakes are both healthy and delicious. They're sugar-free, dairy-free and gluten-free.

Ingredients
  • 2 medium ripe bananas
  • 2 eggs
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1.5 cups old fashioned oats (use gluten-free oatmeal for a gluten-free option)
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • olive oil, for cooking
Directions
  • Step 1 Add all the ingredients into a blender and blend on high until smooth. Let batter sit for 5 minutes.
  • Step 2 Lightly coat a pan with cooking oil on medium heat. Take a paper towel and very gently wipe the oil across the pan’s surface to evenly coat the pan. Once pan is hot add a ladle of batter onto pan. Once bubbles form flip the pancake. (If pancakes are browning too quickly then just lower heat a bit.)
  • Step 3 Wipe pan clean and make another pancake (follow step 2 again). Makes about 6-9 pancakes depending on pancake size.
  • Step 4 Serve with maple syrup, sliced bananas and pecans/walnuts.
