5-ingredient Banana Oatmeal Muffins

This recipe was actually discovered by my teenage daughters.  I guess they felt my banana bread recipe (which often is baked into muffins) wasn’t healthy enough (haha!) so they found this nutritious (and delicious) recipe that’s sugar-free, gluten-free and dairy-free. I must admit I was reluctant at first.  I mean how can you bake muffins with just 5 ingredients…especially these 5 particular ingredients: bananas, rolled oats, eggs, maple syrup and baking soda.  I assure you though, this 5-ingredient Banana Oatmeal Muffin recipe is really really good, addicting even.  I find myself eating at least 2 muffins straight out of the oven.  I really have to control myself from eating any more.

Ingredients
  • 3 ripe bananas
  • 2 cups old-fashioned rolled oats (use gluten-free oats for gluten-free muffins)
  • 2 eggs
  • 1/3 cup pure maple syrup
  • 1 teaspoon baking soda
Directions
  • Step 1 Preheat oven to 176°C (375°F).
  • Step 2 Add all 5 ingredients into a blender and blend until smooth.
  • Step 3 Fill muffin liners with batter. No need to leave room at the top. These muffins have a small controlled rise.
  • Step 4 OPTIONAL: You can garnish the top with a few granola pieces. Totally optional.
  • Step 5 Bake for about 14 minutes (baking times vary depending on the oven).
  • Step 6 Enjoy warm right out of the oven, or later at room temperature.
